Cheshire Baked Pumpkin
This Cheshire Cheese Baked Pumpkin is a showstopping autumnal treat, featuring creamy Cheshire cheese wrapped in golden, flaky puff pastry and shaped into a charming pumpkin. Perfect for Halloween parties, autumn gatherings or a cosy seasonal supper, it’s simple to make and delicious served warm with chutney, crusty bread or fresh apple slices.
Ingredients
- 1 Cheshire Truckle
- 1 sheet of puff pastry (thawed)
- 1 egg (beaten, for egg wash)
- 1 small cinnamon stick (optional, for decoration)
- Fresh sage or rosemary sprigs (for garnish)
- Crackers, crusty bread, or sliced veggies (for serving)
Method
1. Preheat the oven Preheat the oven to 200°C / 180°C fan / 400°F / Gas Mark 6. Line a baking tray with baking parchment.
2. Prepare the cheese and pastry: Unwrap the Cheshire cheese truckle and pat it dry if necessary. Place the puff pastry on a lightly floured surface and position the cheese in the centre. Cut the pastry into a circle large enough to enclose the cheese, leaving sufficient pastry to fold over the top and seal underneath. Reserve any excess pastry for decoration, if desired.
3. Wrap the cheese: Place the cheese in the centre of the pastry. Bring the pastry edges up and over the cheese, pleating them neatly and pinching the edges together underneath to form a sealed parcel. Trim away any bulky excess pastry to prevent an uneven finish. Turn the parcel over so the seam is underneath.
4. Shape the pumpkin: Cut four long lengths of cooking string and arrange them in a criss-cross pattern beneath the pastry parcel. Bring the ends up and over the top, tying them loosely to divide the parcel into eight sections, creating a pumpkin shape.
Keep the string snug enough to define the segments but not so tight that it cuts deeply into the pastry. The pastry will expand as it bakes.
5. Apply the egg wash: Brush the entire surface of the pastry with beaten egg, taking care to coat it evenly for a rich, golden finish. If desired, use the reserved pastry to create a small leaf or decorative detail and attach it with a little egg wash.
6. Bake until golden: Place the pumpkin on the prepared baking tray and bake for 20–25 minutes, or until the pastry is well risen and deep golden brown.
Check that the pastry underneath is cooked through. If the pastry browns before the cheese is sufficiently warm, loosely cover it with foil and continue baking for a few minutes.
7. Remove the string and finish: Allow the pumpkin to rest for 5 minutes after baking. Carefully snip and remove each length of string, taking care not to tear the pastry. The string should leave distinct pumpkin-like ridges.
If needed, gently enhance the segment lines with a small, sharp knife, avoiding deep cuts that could expose the cheese.
8. Add the finishing touches: Insert a small cinnamon stick into the top centre to create a natural-looking stem. Arrange a few fresh rosemary sprigs around the base for an attractive autumnal finish.
Serve warm, while the pastry is crisp and the Cheshire cheese is soft and creamy. Pair with crusty bread, apple slices or a chutney for a delicious savoury centrepiece.
