Vintage Cheddar Cheese Savoury Hot Cross Buns Easter is full of sweet treats, so how about switching up an Easter classic with a savoury twist! These hot cross buns are made with our special aged vintage cheddar cheese for a rich and mature flavour, perfectly paired with salted butter and an extra sprinkle of cheese! Ingredients 250ml whole milk 50g unsalted butter 500g strong white bread flour plus 5 tbsp 7g fast-action dried yeast ½ tsp cayenne pepper 1 egg-beaten 150g Vintage Special Aged Cheddar Method Warm the butter and milk together until warm but not hot. Mix the flour, yeast, salt and pepper in a large mixing bowl and make a well in the centre Pour in the warm milk mixture and a beaten egg Knead until the dough is smooth, this should take about 6-8 minutes. Cover over and leave the dough for about two hours for it to double in size. Stretch the dough out into a large square and top on the grated Vintage cheddar. Lightly knead again until the cheese is distributed throughout the dough. Divide into 12 balls and set onto a baking tray with enough room for them to rise. Cover over for around 30 minutes. Mix 5 tbsp of flour with 5 tbsp of water to form a paste, then use this to make a cross on top of each bun. Bake in the oven for 30 minutes at 180°c. Serve warm with your choice of accompaniments!

Truffle and Prosciutto Swirls Truffle & Prosciutto Swirls Ingredients ❆ 150g Hunter truffle and cracked black pepper cheddar ❆ One pack of prosciutto ❆ Puff pastry 320g ❆ One egg ❆ Black pepper Method Allow pastry to come to room temperature and roll out until 1cm thick. Cut width ways down the middle. Lay the prosciutto covering one half of the pastry and grate your Hunter cheddar and add a generous layer on top of the ham. Lay the other half of the pastry sheet on top of the cheese and press down. Cut the pastry into thin strips and then twist into long lines. Twist the pastry to make a swirls Brush with egg wash and crack fresh black pepper over the top. Bake in the oven for 30-35 minutes at 180 degrees. Allow to cool, add a sprig of rosemary and enjoy! Whipped Cranberry Cheshire Crostinis Whipped Cranberry Cheshire Crostinis Ingredients ❆ 200g Cranberry Cheshire ❆ 180g cream cheese ❆ One fresh baguette ❆ Olive oil ❆ Honey ❆ Fresh cranberries ❆ Rosemary Method Slice your baguette, brush with olive oil and a sprinkle of salt and place until the grill for a couple of minutes until golden. Chop your Cranberry Cheshire and add to a food processor along with the cream cheese. Blend until you have a smooth consistency. Generously spread your whipped Cheshire onto the baguette. Add a drizzle of honey, a couple of cranberries and a sprig of rosemary. Serve and enjoy! Mini Jerk spice Chilli & Garlic Scones Mini Jerk spice Chilli & Garlic Scones Ingredients ❆100g Jerk Spice chilli and garlic cheddar ❆112g self raising flour ❆Pinch of salt ❆Pinch of Paprika ❆½ tsp Baking powder ❆27g chilled butter, cubed ❆50ml milk Method Add dry ingredients to a bowl and mix. Add butter and rub in until you have a breadcrumb consistency. Add around 70g of cheese and mix until combined. Add milk and mix until you have a smooth dough. Roll out until 1-2cm thick. Cut out and place on a baking tray. Brush with egg wash and top with remaining cheese. Bake for about 12 minutes until they’ve risen and are golden. Allow to cool, serve plain or fill with charcuterie meats, cheese and chutneys.
